What's for Dinner?

I love to cook.. I'm a picky eater and it sucks but I'm trying.. I really am. A friend suggested a blog to me a little while ago: Smitten Kitchen.. Wow. Amazing! That woman is talented and her photographs are amazing.. I was perusing the site the other day and came across her potato pizza. I'm supposed to be watching my carbs but the little voice in my head said "Feck it" and so I went ahead and made it last night. We have a lot of potatoes at home from a recent shopping trip (can't seem to remember why I bought them (note to self: stop drinking before grocery shopping)). This dish was divine..

I made the pizza dough and let it rise for 90 minutes. Google pizza dough and find a recipe.. that's what I do. I cleaned about 5 small potatoes. After peeling them I sliced them thinly using my vegetable slicer and tossed them in olive oil and salt and pepper. I chopped up an onion and threw it in with the potatoes. I rolled out the dough, topped it with the potato mix and sprinkled some feta on the top with oregano. I baked it at 190 (Celsius- I live in Europe) for about 30 minutes. Served it with a salad in vinaigrette dressing and eu mah gawd was that a great meal.

Since the husband was working late I decided to prepare dinner for tonight last night. Since I have all these mystery potatoes lying around I made gnocchi for the first time.... Let me just share a little secret... I hate following recipes, I use them only as a suggestion.. even when baking I veer away from set measurements. Not smart, I know, but I won't change... So, back to my gnocchi experiment.. I read a few recipes and got the idea about what goes in them and then I started.

I took about 6 small potatoes and boiled them until they were soft. The suckers took about 30 minutes to cook. I peeled them and then mashed them with a fork until they were, um, mashed. I added a little bit of olive oil and salt as I worked. I added one egg and mixed it in. I took about a cup of flour and added it slowly until the dough was no longer goopy (technical term). The goopiness got better and then I carefully rolled the dough into a loaf on the floured counter. Being lazy I just rolled them into balls and skipped the fork imprint step.. I put them on a floured plate and now they sit in the fridge awaiting their fate tonight...

I'll stop by the grocery store tonight and pick up some basil.. I have parmesan and butter in the fridge. I'll melt a little butter and toss the cooked gnocchi in that and then add freshly grated parmesan and pepper to it- basil for garnish.. Update to follow tomorrow!
