What's for Dinner?

Tonight is tagliatelle with pesto.. I'm meeting friends so I should be home around 9 or so and then I have just a couple of minutes of cooking to do. And then a party in my mouth... I was thinking about another cheap and easy recipe to write about and here it is..

Couscous Salad

2 cups couscous
2 cups broth (veggie or chicken)
2 tbsp of olive oil
1 onion
2 tbsp of lemon juice
1 red pepper
1 yellow pepper
Some feta (optional)
salt and pepper to taste

Bring the broth to a boil. Take off the stove and add the couscous. Cover with a plate and let it sit for about 10 minutes. After the ten minutes have passed, fluff the couscous with a fork and transfer to a large salad bowl. Add chopped up pieces of peppers, onion and feta. Mix together and add olive oil and lemon juice. Season. Chill. This is a great summer dish on its own or even as a side to meats. You can add any veggies that you like and I like to cook couscous in broth to add flavour. I love coucous.. I love saying couscous. Experiment. Enjoy.
