What's for Dinner?

Happy Hanukkah! A little late I know but we were busy decorating our Christmas tree :/ It's so purty. The apartment is decorated and I'll get pictures on here as soon as we figure out how to use our new camera.. It's pink. I'm in love.

So, I drank too much at the company Christmas party.. It was in a palace.. I couldn't help myself.

Anyway, when I was dying on Friday I decided to make some comfort food. Mac and Cheese is my go to food when I am feeling like I should consider AA. Growing up, Kraft Dinner was considered pasta gold. We lived abroad so we couldn't easily buy it but whenever a member of the family visited, they were our drug mule for KD. I got in trouble as a kid cuz I used 2 boxes rather than one when friends were visiting. I'm not kidding when I say I was encouraged to defrost the filet mignon if I got hungry rather than reach for the orange stuff.. Now I want KD.

Living in Europe it is not readily available. You would think that with all this globalization and crap that KD would be considered the food of the world by now but it isn't and I am sad. I can get it at a specialty store but it costs something like 300 dollars and I just can't do it.. So, instead, I have to make my own mac and cheese. Here's a simple, probably healthier than KD, recipe.

Mac and Cheese

As much macaroni as you can stomache
1/4 cup of chicken or veg stock
1/4 cup of milk
Cup of grated cheese (any kind)
1 tbsp of butter
salt and pepper to taste

Cook your macaroni. On low heat add milk and stock, butter and cheese and melt together in a saucepan. Pour sauce over the pasta. Take an aspirin and eat mac and cheese.

I've spent the morning wrapping presents for the Husband. I do this so that he can see how many I have bought him and that he will know that I expect the same. Christmas is about spending time with your loved ones and getting presents..

Time now to watch Scrooged and rekindle my crush on Bill Murray.

Bon Apetit!
