System is down at work so I thought I would post a quick recipe idea... I love latkes and the potato versions are zee best but here is a little twist.. Mazel Tov!
Sweet Potato Latkes
2-3 sweet potatoes
1 egg
3 tbsp of flour
3 tbsp of butter
Oil for frying
Pinch of salt
Slice the potatoes in two (lengthwise). Bake in the oven at 180 until a fork can penetrate (hehehe. I'm 9) the whole tater. This will take 20-40 mins. I brush them with a little oil periodicallysdfks (can't spell) so they don't dry up. Once they are done, take them out and scoop out the insides. Place in a bowl and add the butter. While mixing it with a fork, add the egg, flour and salt. Once everything is mixed, heat oil in a frying pan. Spoon the mixture into the pan and brown the latkes on each side. You can season them any way you would like- cinnamininin and/or nutmeg would be great too. Open up your bottle of Manischewitz and enjoy.
