This is a great sandwich I make once in a while. I use halloumi. For those of you not in the know, halloumi is a Cypriot cheese that is usually grilled on the barbie (for all you Australians) BBQ (for the North Americans). Halloumi loosely translates to Freaking Good Cheese.. I think. And if not then it should be. The first time I had halloumi was actually in Cyprus and it was love at first bite. It was grilled to perfection and served with olive oil. Since we live in an apartment we don't have a barbeque. The Husband does not seem to be ok with my suggestion of a bbq on our balcony... One day G! One day!! Anywho, halloumi can be fried in a frying pan too for the bbq-less peeps out there. Here's my sandwich:
Halloumi Sandwich with Herb Creme Fraiche:
One package of halloumi (should be available in most supermarkets in Europe)
One Baguette
1 tbsp of olive oil
2-3 tomatoes (I hate fresh tomatoes so I put them on other people's sandwiches)
Creme Fraiche/ Herbed cream cheese (I add chives to creme fraiche if I have the extra time, if not Philadelphia Chive/Herb flavours are good too)
Salt to taste (Halloumi can be pretty salty so test first)
Slice the halloumi into thin slices. Cook in a non stick pan until brown on each side (not burnt!). Slice the baguette into two sandwiches and toast. Once done, sprinkle with some olive oil on each side. Spread creme fraiche/ cream cheese on the baguettes, add the halloumi and tomato slices. Done! Enjoy. You can adapt this sandwich to your own tastes: adding lettuce and onions, or just plain cream cheese. The sky's the limit!
