What's for Dinner?

I'm back! I had an amazing weekend away with the Husband at the hotel Panhans in Semmering- a ski resort 90 km from Vienna. Did we ski? No. Did we have fun? Yes! Yes we did. It was great to get away from the city and to take in nature. There was a lot of nature. And it was quiet. The hotel had a spa and I got yelled at for going into the steam room wearing my bathing suit. Geez. I was flattered, naturally. Um. Yeah. Anyway, it was a great way to celebrate our 6 year anniversary and now I am back and I don't want to be. I feel more relaxed and I have to thank my friend Debra for mentioning Vitamin B. Wow! I started taking it on Thursday and my mood is so much better. Thank you!

Sidenote: Gah! I just read about what can happen with a vitamin B deficiency. Gah! Now I think I am dying. I hate looking up medical stuff.

Anywho. I am in a better mood, I am ready to face the world and I AM SO BEHIND ON MY PROJECTS. It is going to be a busy week! Here's a recipe for the winter. I had this soup for the first time at a restaurant a few months ago and OMG it was to die for. I give you my version of Parmesan Foam Soup!

Parmesan Foam Soup:
2 cloves of garlic crushed
1 shallot or white onion chopped
1/2 liter of chicken or veg stock
1/2 cup white wine
1 cup cream (milk is an option too)
2 tbsp of butter
salt and pepper to taste
half a cup of freshly grated parmesan

Saute the onions and garlic in butter in a saucepan until the onions are translucent. Add the broth and wine to the onions and garlic and let simmer for a few minutes. Using a handmixer, mix until the soup is smoothe. Add the cream and salt and pepper. Using one of those mini milk frothers (you know the ones that you place in a cup of warm milk and then turns said milk into froth? Yeah. That thing) and mix the soup until it is slightly frothy. Place the parmesan at the bottom of soup bowls and spoon the soup on top. Yum. Yum. Yum. Cheesy goodness.

Now I want soup.
