I had a friend over for wine on the balcony last night and I was in an experimental mood. I had some leftover potatoes and a roll of pastry dough and thought, "Hey! Potato tarts!" These were quite easy to make and were pretty sinful- but great for partays or random tea parties..
Potato Tarts in a Bechamel Sauce
10 small potatoes
1 onion
1 rectangle of pastry dough
Pine nuts- handful
Nutmeg
Freshly grated parmesan
Bechamel sauce (I just melted a couple tablespoons of butter, some flour and milk and whisked until smooth)
Take 2 muffin pans and spray with pam. With a large wine glass, cut out circles of the dough and place in the muffin tin. Slice potatoes thinly (almost translucent) and chop up on onion. Heat some olive oil in a pan and add pine nuts, roasting them until light brown. Add potatoes and onions and cook for about 5 minutes on a low heat. Add salt and pepper. Make your bechamel sauce in the meantime (I added nutmeg to it) and once done, pour over potatoes, pine nuts and onion and mix. Transfer small heapings into the pastry in the muffin tins. Once done, top with about a teaspoon of parmesan. Bake at 180 for about 20 minutes, or until the cheese is slightly brown and the pastry is golden. Take out with a fork and let them cool. These taste great at room temperature.
So there you have it. Fancy little potato tart things that are horriffically high in calories but oh so good..
