Friday I'm in Love. Oh yeah, sing it. I'm stoked that it is almost the weekend. I'll be going into work tomorrow to finish up some stuff but it is a-ok as I am off next week as of Wednesday. Holla! I watched an old episode of The Hills this morning and boy does that Heidi look different now. I'm a self hater of my looks but I don't think I could go under the knife. Meh, got a man. I'm fine. Looks, as all the gurus say, are relative. It's your confidence and personality that shines through. To a certain amount they speak the truth. Look at your friends and realise that they are all beautiful people. I find that when I am friends with someone I find them extremely attractive. Don't like you? You be ugly to me. It's just sad that someone like Heidi at such a young age would go to such extremes. Sad.. I judge. I digress.
Today I am going to talk about Macaroons. Oh yeah. Macaroons are one of those things that I don't crave but when I have one then I think "God! How I missed you!". This is a super easy recipe if you need to be all Jewishy because your Aunt Ruth is coming by with a Doctor.
Macaroons for a Mahvelous Maccabbee
8 Eggs Whites
1 Cup Sugar
1 tsp Vanilla
1 Cup Grated Coconut (buy the package you crazy overachiever)
Beat the egg whites until firm.. You know.. Completely white and well, beaten. Add in the sugar and beat until the consistency is like soft/melted marshmellows. Then add the coconut and vanilla and mix together with a fork. Using a spoon, drop small spoonfuls onto a cookie sheet. Put it in the oven (preheated to 180 or so) and bake until golden brown. I'm guessing 10-15 minutes but just look at them and see. To go the extra mile, dip the bottoms in melted chocolate. You go champ!
That's about it for the macaroons. If you want to cut on calories and sugar, use sweetener instead. I'm not a huge fan of coconut milk though. I remember when I was about 5 we went to Thailand. There was this place where a monkey would climb a tree and knock down coconuts. One monkey brought me a coconut that had a straw in it. I was amused. I wanted a monkey at home to bring me things. "Monkey! Bring me my Brownies' sash and my backpack! Now!" I took a sip of it and it was narsty. Warm and narsty. Stupid monkey.
Well, better start the workday. I'm seeing a film with the Husband this afternoon and then we are heading to TGIFriday's pour le diner. Yay! Date night!
