I'm so watching my carbs. You, carbs! I'm watching you! So I need to forgo the bread and the sugar and stick to cheese. Not so bad actually. Anyway, tonight I am making bulgogi. The Husband likes to say bulgogi. It gives him a kick. He's special. Anyway, this is a type of Korean bbq that I had for the first time in Moscow over 10 years ago. Moscow, the home of bulgogi? My friend Chucky (Charles from South Korea who when I first met him convinced me he was from North Korea. Very clever. Very) took a group of us to a Korean restaurant. The place was hidden and you had to knock on the door to gain access. It was cool and pretty scary. The food was amazing and I haven't had real Korean bbq since. Sigh. But I make my own and it's ok.
I start off with slices of minute steak and marinated them in soy sauce, sugar (sweetener), garlic cloves, and ginger for a couple of hours. I take large slices of lettuce and wash and dry them. Using the raclette, we throw on a couple of slices and let the meat cook. When it's done I add hot sauce and roll it in the lettuce leaves. Done. Good. The Husband adds rice to his roll. It's a quick and easy meal. One day I will have real Korean bbq. Oh! My birthday's coming up. Hint a hint a hint.
I'm back at work and ready to start the new year. I've got my big girl panties on and nothing will faze me.
