I've been extremely bad at updating this but extremely busy with things for this. Stay tuned for crocheted yarmulkes, a flowy top, baby pimp jacket and restyled shoes.. Oh yeah. But todays post is about food. As I work hard to shed the almost 70 pounds I put on during pregnancy (the child was 50 pounds when he came out.. I swear) I've been looking for somewhat healthy meals for dinner. I've dropped 50 so far and it has been (for lack of better term) a pain in the ass. It ain't easy but I want to be able to wear my clothes again. I'm so vain. I'm aiming to lose another 30-40 pounds and I'll post pictures when I finally reach that goal. Hopefully by tomorrow?
So I have been making curry and I'm absolutely hooked. I have never made curry before because it seemed like a lot of work but au contraire. Now, everyone seems to have their own curry recipe and everyone will think this is in an inferior curry recipe but it isn't. It's easy and it is good. Live with it..
Tova's Easy Curry:
1-2 cup chicken broth
2 chicken breasts (tee hee) diced
Dash of cinnaminonom
3 cloves of garlic
1 large onion chopped
A couple of cups of diced potatoes
2-3 teaspoons of spicy curry powder (bought at Naschmarkt)
1-2 tbsp Vegetable oil
Heat the oil, add onion, crushed garlic and chopped onion.Stir for a couple of minutes, add chicken and cook slightly, add potatoes and broth. Let it simmer for a couple of minutes on a lower heat. Add cinnamonin and curry and let simmer for an hour or so. Check liquid and add more broth or a little water. Ta da. Done. I added coconut milk yesterday and it was great too. Curry purists will disagree with my method but I found it super good. Pat myself on my back..
To add to the curry I also made roti. This wasn't as difficult as I thought it would be. Roti is fried bread. So good, a little greasy. I just had a little.
1.5 cups flour
pinch of salt
about half a cup of water
2 tsp of oil
half a cup oil for later
Mix the ingredients all together except for the half cup of oil. Knead until smooth. It will be a little sticky. Seperate into 6 balls and place in a bowl with the half cup of oil. Let it sit for about an hour. Oil up your work space. Heat up a pan and spray with Pam or something like that. Roll out the ball of dough with your hands until quite thin. It doesn't matter if it has holes or is not pretty. Transfer carefully to the hot pan and cook for about a minute on each side. These can be made in advance and heated up later. Soo good.
